Lemon Herbed Roasted Reds
Yields 4-6 servings
1.5 lb. bag of EarthFresh Mini Organic Yellow Potatoes
¼ cup olive oil, reserving 1 Tbsp
6 EarthFresh Red Potatoes, Best for Roasting
2 tbsp. coconut oil, melted
1 tbsp. lemon herb spice blend, any brand
1 tbsp. fresh lemon rind
Pre heat oven to 350 degrees F
Wash, dry, and cut the potatoes the potatoes into small, even sized pieces. Place potatoes, coconut oil and lemon herb spice into a medium bowl and toss, coating potatoes evenly.
Transfer potatoes to a small roasting pan and roast in the oven for 30-40 minutes, turning once. Bake until potatoes are crisp and golden brown. Potatoes will be done when fork tender. Remove form oven when cooked, place potatoes into a serving dish and garnish with fresh lemon rind. Potatoes can be stored in the refrigerator for up to three days. Enjoy!
