Horseradish Mashed Potatoes
Vegetarian and Gluten-Free!
High in potassium, good source of Vitamin C and loaded with fibre!
Ingredients:2 lbs. EarthFresh Yellow Potatoes - Best for Mashing
3 tbsp. butter
2 tbsp. light sour cream
½ cup grated parmesan cheese
5 tbsp. horseradish root- grated
Salt and pepper to taste
Fresh parsley – chopped
Place potatoes in a pot of cold, salted water and bring to a boil. When fork tender, drain and place potatoes in a large bowl.
Add sour cream, butter, parmesan cheese and grated horseradish. Lightly mash - add parsley. Do not over mash the potatoes. Add salt and pepper. Serve and enjoy!
