Herbed Fingerling Pizza

Makes 8 slices
1.5 lb bag of EarthFresh Gourmet Yellow Fingerlings
pizza dough, store-bought or home-made
½ cup olive oil
2 Tbsp chopped fresh oregano
1.5 tsp red pepper flakes
4 garlic cloves, minced
1 tsp salt
4-6 slices fresh mozzarella
Preheat oven to 425°F. Let the pizza dough rest at room temperature for 30 minutes.
Wash, dry, and thinly slice the potatoes and set aside. In a small bowl, mix the olive oil, oregano red pepper flakes, garlic and salt. Set aside.
Roll out the pizza dough to the desired size and place the dough on a parchment paper lined pizza pan. Brush the dough with the herbed oil mixture and arrange the potatoes over the dough, leaving a 1 inch section for the crust to rise. Sprinkle the crust with sesame seeds and place the pizza into the oven.
Bake for 20 minutes or until the pizza is crisp. Remove from the oven, add the mozzarella and a few more spoonfuls of the herbed oil mixture. Place back into the oven until the cheese is melted (around 3-5 minutes). Remove the pizza from the oven and transfer to a cutting board. Cut into 8 slices and serve warm. Enjoy!
