Guinness Gratin Potatoes
High in potassium, good source of Vitamin C and loaded with fibre!
4 EarthFresh Russet Potatoes – thinly sliced using a mandolin
1 cup Guinness beer
1 cup panko breadcrumbs
1 cup gruyere cheese - shredded
1 cup white cheddar - shredded
1/2 cup grated parmesan cheese
1.5 grams pancetta – thinly sliced
1 small yellow onion - thinly sliced
1 cup milk
3 garlic cloves
3 Tbsp flour
3 Tbsp butter
1/2 teaspoon kosher salt
Preheat oven to 375oF
Add beer, milk, salt, garlic and all cheeses to a food processor - blend on high for 2 minutes.
In a large pan over medium heat, melt butter and flour to make a roux. Add the cheese mixture and stir. Add sliced potatoes and cook for 10 minutes.
Place a layer of potato, pancetta and onion in each ramekin and add enough of the cheese sauce to just barely cover the potatoes. Repeat this process until all potatoes and cheese mixture have filled the ramekins.
Divide and sprinkle the panko over each ramekin. Bake for 50-60 minutes - until potatoes are fork tender and panko is golden brown and bubbling.
