Greek Inspired Mashed Potatoes
High in potassium, good source of Vitamin C, low in fat, Vegetarian and Gluten-Free!/font>
This recipe is a healthier alternative to the traditional butter mashed potato recipe.
Yields 4-6 servings
8 EarthFresh Yellow potatoes, Best for Mashing
2 cloves of garlic, roughly chopped
3 tbsp. Greek yogurt
1 tbsp. lemon juice
1 tbsp. oregano
¼ cup feta, crumbled, reserve 2 tbsp.
½ cup black olives, sliced
¼ cup, tomato, chopped
Wash, dry and cut the potatoes into even chunks. Place the potatoes and garlic into a pot of cold, salted water. Bring to a boil, reduce heat to medium-low, cover and simmer until tender, roughly 15 minutes until cooked.
Drain and transfer potatoes to a large glass bowl. Add the Greek yogurt, lemon juice, oregano and feta - lightly mash. Add the olives, tomatoes, and gently mix to incorporate all ingredients. Garnish with crumbled feta, serve immediately and enjoy.
