These delicious and easy to make garlic parmesan fries are the perfect gluten-free side dish for any meal. High in potassium, a good source of vitamin C, and loaded with fibre, these fries are easy to prepare and only require a few ingredients. EarthFresh Russet Potatoes are the key to delicious fries.

Ingredients

  • 4 EarthFresh Russet Potatoes
  • 1 litre vegetable oil
  • 2 tbsp butter, melted
  • 1 tsp garlic, minced
  • ¼ cup Parmesan cheese, grated
  • 3 tbsp fresh parsley, chopped

Directions

Wash and dry potatoes, then cut into fries.

Fill a deep fryer with vegetable oil to the maximum line. Set temperature to 250°F (120°C).

Working in small batches, fill the fry basket halfway. Drop the fries into the oil and blanch for 2-3 minutes. Remove fry basket from deep fryer and shake off excess oil over deep fryer. Transfer fries to a baking sheet and arrange into a single layer. Allow to cool.

Increase the fryer heat to 350°F (180°C). Again, working in small batches, fill the fry basket halfway. Drop the fries into the oil for another 3-4 minutes, or until they are golden brown and float to the surface.

Remove fry basket from deep fryer and shake off excess oil over deep fryer. Transfer fries to a brown paper bag, allowing excess oil to be absorbed. Season with salt, close the paper bag and shake the fries.

Place butter into a small bowl and melt in the microwave for 30 seconds. Remove and stir in the minced garlic.

Transfer fries to a platter and drizzle with butter mixture. Garnish with cheese and parsley. Enjoy!
