Fiesta Baked Potato
High in potassium, good source of Vitamin C, low in fat and loaded with fibre!
This recipe is a healthier alternative to the traditional loaded baked potato, vegetarian and Gluten-Free!
4 EarthFresh Russet Potatoes, Best for Baking
½ cup Greek Yogurt
½ cup, corn
½ cup, black beans
1 tomato, chopped
Pre heat oven to 400 degrees F
Wash and dry potatoes. Prick potatoes all over with a fork, lightly rub with olive oil and season with salt. Place potatoes directly onto an oven rack and bake until fork tender and skin is crisp, roughly 50-60 minutes. Remove from oven and and transfer potatoes to a plate.
Slice the potatoes down the center and gentle squeeze open. Fluff the flesh of each potato, divide the ingredients into four, first adding the Greek yogurt, followed by the corn, black beans and chopped tomato. Serve immediately and enjoy!
