Crispy Potatoes and Plantains

Makes 6 Servings
1.5 lb. bag of EarthFresh Baby Red Organic Potatoes
2 Tbsp. (30 mL) olive oil
2 plantains, peeled and diagonally cut into ½ inch pieces
½ tsp. sea salt
2 Tbsp. fresh parsley, chopped
1 Tbsp. (15 mL) honey
Wash, dry and chop the potatoes into halves. Set aside.
In a large skillet, add the olive oil over medium heat. Add the potatoes, salt and plantain slices. Cook until potatoes are fork tender and plantains are golden in colour (roughly 20 minutes).
Remove from heat and transfer to a serving platter. Garnish with fresh parsley and drizzle with honey. Serve warm. Enjoy
