Creamy Dill Scalloped Potato Salad
Vegetarian and Gluten-Free!

2 lbs EarthFresh White Potatoes - Best for Boiling
½ cup greek yogurt
¾ cup light mayonnaise
2 Tbsp lemon juice
4 Tbsp fresh dill
1 Tbsp dijon mustard
Wash and peel potatoes. Using a mandolin, cut potatoes into quarter inch slices. Place in a pot of cold, salted water and bring to a boil. When fork tender, drain and let cool.
In a bowl, mix all ingredients except the potatoes.
Once potatoes are cooled, combine dill mixture and refrigerate for 2 hours before serving.
