Chef Carla’s Classic Mashed Potatoes
Makes 6 Servings

6 Yellow Potatoes, EarthFresh best for Mashing
¼ cup (60 mL) 2% Greek Yogurt
1 tbsp. (15mL) unsalted butter
½ tsp. (2.5 mL) salt
Wash, dry, and cut potatoes into small even pieces. In a large pot place the potatoes into cold salted water and bring to a boil. Reduce heat and cook until potatoes are fork tender, roughly seven to ten minutes. Remove and strain water from potatoes.
In a large bowl add the potatoes, 2% Greek yogurt, unsalted butter and salt. Mash together all ingredients until smooth and lump free.
Transfer potatoes to a medium serving bowl. Serve immediately.
