Cajun Style Hash browns with Honey Dijon Dressing
Yields: 5 servings
1.5 lb bag of EarthFresh Baby Yellow Organic Potatoes
2 tbsp. (15ml) olive oil
1 red onion, diced
1 tbsp. (15ml) garlic, minced
1 tsp. (5ml) cumin
1 tsp. (5ml) oregano
1 tsp. (5m) coriander
1 tsp. (5ml) smoked paprika
1 tsp. (5ml) chili powder
1 tsp. (5ml) salt
1 tsp. (5ml) pepper
1/3 cup green onion, thinly sliced
1/3 cup fresh cilantro, chopped
Honey Dijon Dressing
1 tbsp. (15ml) honey
1 tbsp. (15ml) Dijon mustard
1 tbsp. (15ml) red wine vinegar
2 tbsp. (30ml) olive oil
In a small bowl, whisk together the honey, Dijon mustard, red wine vinegar and olive oil. Set aside.
Wash and dry potatoes. Place the potatoes into a large pot of cold, salted water and bring to a boil over high heat. Reduce heat to medium and continuing cooking until potatoes are fork tender, roughly seven minutes. Drain and set potatoes aside allowing them to cool completely. When cooled, cut in half, set aside.
Over medium heat, add the olive oil and onions to a skillet and sauté until translucent, roughly three minutes. Add the cumin, oregano, coriander, smoked paprika, chile powder, salt, pepper and the potatoes and stir, incorporating all ingredients. Continue cooking until the potatoes have turned golden brown and have a crisp exterior, roughly ten minutes.
Remove potatoes from the stove and transfer to a medium serving dish. Drizzle the honey Dijon dressing and garnish with green onions and fresh cilantro. Serve Warm.
