Broccoli and Cheese Loaded Baked Potatoes

6 EarthFresh Russet Potatoes
1 bunch broccoli, washed and trimmed
4 slices turkey bacon, chopped
½ cup shredded cheddar cheese
Preheat oven to 350°F (177°C).
Wrap each potato with tin foil and place them on a baking sheet. Bake for 50-60 minutes.
Add the turkey bacon to a frying pan and cook over medium heat. Remove and set aside.
Add the broccoli to a pot of cold water and bring to a boil, reduce het and continue to cook for 3 minutes. Set cooked broccoli aside.
Remove the potatoes from the oven and carefully open the tin foil, potatoes will be very hot. Allow the potatoes to cool for 10 minutes. Once cooled, cut each potato in half and scoop out the centers and placing in a large bowl. Add the broccoli, turkey bacon and shredded cheese, mixing well.
Stuff each potato with the broccoli, potato and cheese mixture. Place the potatoes back into the oven and cook for another 15 minutes until the cheese is melted.
Remove the potatoes from the oven and transfer to a serving palter. Enjoy!
