Ultimate Baked Potato
4 EarthFresh baking potatoes
8 slices of bacon, cut in strips
Sea salt and freshly ground pepper
1 tbsp of finely chopped chives
4 tbsp light sour cream
Preheat the oven to 375°F.
Clean the potatoes under running water and pat dry. Rub the potatoes lightly with extra virgin olive oil and sprinkle with sea salt. Bake for 45-60 minutes.
While the potatoes are baking, cook bacon and set aside.
When potatoes are soft, remove from the oven and pierce the potato with a fork, lengthwise and crosswise. Press the potato at both ends and open it. Sprinkle with salt and pepper. Top with sour cream and crispy bacon strips. Garnish with chopped chives.
TIP: For a healthier baked potato, replace the bacon with turkey bacon.
