Crispy Honey-Dijon Fingerlings
High in potassium, good source of Vitamin C, vegetarian and loaded with fibre!Ingredients:
1.5 lbs. EarthFresh Yellow Fingerling potatoes
3 tbsp. dijon mustard
3 tbsp. honey
1.5 tbsp. olive oil
1 tbsp. fresh thyme - minced
1/4 cup panko breadcrumbsDirections:
Preheat oven to 400oF.
Add potatoes to a pot of cold, salted water and bring to a boil. When fork tender - about 12 -15 minutes, remove from stove, drain and set aside. When cooled, cut lengthwise.
In a medium bowl, mix the dijon mustard, honey, olive oil, fresh thyme and salt together. Gently add the potatoes and mix until well incorporated. Spread the potatoes on a parchment covered baking sheet and sprinkle with panko breadcrumbs.
Bake until browned and crispy - about 30 minutes. Remove from oven, place on a plate and serve warm - can be served with your favourite honey mustard dipping sauce.
