Cucumber and Mint Potato Salad

This salad is Gluten-Free, vegan and vegetarian
1.5 lbs EarthFresh Yellow Baby Organic Potatoes
1/2 cup olive oil
2 Tbsp white vinegar
1 Tbsp kosher salt
1 cup diced red onion
5 mini cucumbers - sliced
1/2 cup fresh mint - minced
Place potatoes in a pot of cold, salted water and bring to a boil. Drain when fork tender and set aside to cool. When potatoes are cool, cut into halves and set aside.
In a large bowl, add the olive oil, vinegar and salt - whisk to make the dressing. Add the potatoes, red onion, cucumbers and mint. Mix well, serve and enjoy!
