Brown Butter Mashed Potatoes
Vegetarian and Gluten-Free!
High in potassium, good source of Vitamin C and loaded with fibre!
2.5 lbs EarthFresh yellow potatoes – best for mashing
1/2 cup half and half cream
nutmeg to taste
sea salt to taste
fresh ground pepper to taste
1/2 cup butter
Cut potatoes into large, evenly-sized chunks. Add to a pot of cold, salted water and boil until fork tender. Strain water from the potatoes. Add all of the ingredients into a medium-size bowl and lightly mash.
For the brown butter sauce, melt butter over medium-high heat. Stir slowly. The butter will start to turn light brown and give off a nutty aroma when finished. Remove from heat, taking precaution not to overcook.
Stir the brown butter sauce into the mashed potatoes and serve warm. Enjoy!
