Brown Butter Mashed Potatoes
Vegetarian and Gluten-Free!
High in potassium, good source of Vitamin C and loaded with fibre!
2.5 lbs EarthFresh yellow potatoes – best for mashing
1/2 cup butter
1/2 cup half and half cream
Nutmeg to taste
Sea salt to taste
Fresh ground pepper to taste
Cut potatoes into even large chunks and add to a pot of cold salted butter. Boil until fork tender, drain and press potatoes in batches through a potato ricer into a large bowl ‑ or mash if you don't have a potato ricer. Add all ingredients and lightly mash. Serve Warm!
Brown butter sauce: simply melt butter over medium‑high heat. It will start to turn light brown and give off a nutty aroma. Stir slowly. Remove from heat ‑ do not let burn.
