Bacon and Lemon Pepper Potatoes
High in potassium, a good source of Vitamin C and Gluten-Free!
1 lb EarthFresh yellow organic potatoes
Salt - to taste
2 Tbsp unsalted butter
Flat leaf parsley for garnish (chopped)
6 slices bacon, cooked and crumbled
1 Tbsp lemon pepper
Cut bacon into small pieces, cook and set aside.
Clean and peel potatoes and place in a pot of cold, salted water. Bring to a boil and drain when fork tender.
Melt butter in pan, with salt and lemon pepper. Lightly pour the mixture over the potatoes and toss to coat.Garnish with cooked bacon and parsley.
Serve and enjoy!
