Celebrating Cultural Diversity at EarthFresh

As a Chef, I am always looking for new and interesting recipes that inspire me.

At EarthFresh we proudly celebrate many cultures. I have been fortunate to learn from many employees with different cultural backgrounds who have provided me with new and inspiring recipes. Recently, I spent some time talking to many of our employees about recipes that were important to them and why; recipes that held meaning and had history. I was pleasantly surprised that potatoes had a special importance in most family recipes. This was very exciting to me!

Christina, who is one of the newest employees to join EarthFresh generously offered her time and cooked with me in our kitchen. She taught me her mother-in-law’s special potato recipe from Serbia. The dough, which is imported from Serbia, is the secret ingredient to holding the mixture of potatoes and onions together. The “Potato and Onion Pita” is simple to make and tastes amazing and authentic.

Potato and Onion Pita

This recipe was submitted by Christina’s mother-in-law. Christina works for EarthFresh in the Sales Department.

Prep Time 20 Minutes| Cooking Time 60 Minutes

Yields: 18 servings

Ingredients:

1.5lb. bags of EarthFresh Organic Yellow Potatoes

2 large white onions, chopped

½ cup (60 mL) extra virgin olive oil

1 tsp. (5 mL) salt

1 tsp. (5 mL) pepper

9 sheets, puff pastry, thawed

** Christina used Homestyle Pastry Sheets from Gala Bakery. This product can be ordered by visiting www.galabakery.ca . Alternatively, you can use any frozen puffed pastry purchased at your local grocer. **

Directions:

Preheat oven to 350°F (177°C).

Wash, dry and cut and the potatoes into small even pieces. In a large bowl stir together the potatoes, onions, salt and pepper. Set aside.

Lay out three pieces of the puff pastry onto a flat service and lightly brush each piece with olive oil, covering the entire surface. Place another piece of puff pastry on top of one of the three lightly oiled pieces and again brush each piece with olive oil, covering the entire service. Repeat this process with the remaining pieces of puff pastry for a total of three layered puff pastries. Place one cup of the potato and onion mixture onto each layered puff pastry and gently spread the mixture evenly over each entire pastry sheet. Finish by rolling up each pastry sheet carefully into a log. Place the three rolls into a 13 x 9 glass baking dish and bake for 45-60 minutes or until golden brown on top. Remove from oven and let cool for 15 minutes. Cut each log into 6 pieces. Serve warm.
