O Canada – 150 Years!

Our great country turns 150 this year and here at EarthFresh, we are proud to be Canadian!

With Canada reaching such a milestone, I decided to make an appetizer that highlights fresh and local. Something that is reflective of the season. Something that screams Summer, Fresh and Canadian!

For the base of this appetizer I use EarthFresh Baby Red Potatoes. Next come the Ontario vine ripe tomatoes, fresh Ontario mozzarella and I garnish them with the vibrant sweet smell of basil from my garden. I top off the potato bites with a balsamic glaze from the Niagara Region and Canadian made black pepper.

How wonderful is it that I can step into my backyard and have a plethora of herbs to choose from! Since my tomatoes aren’t quite ripe, a quick trip to my local supermarket led me straight to the juiciest Ontario grown tomatoes. I had no shortage of potatoes to choose from as well!

Finding the balsamic vinegar, cheese and even the pepper was not hard to find either. During my search, I came across a multitude of proudly Canadian companies offering the above ingredients from coast to coast.

This Canadian appetizer is guaranteed to be a hit at your Canada Day celebration. Not only healthy and simple to prepare, you can make it in under 15 minutes! I truly hope you enjoy this Canadian made recipe!

Ingredients:

1.5 lb bag EarthFresh Baby Red Potatoes – Product of Canada

6 small vine ripe tomatoes – Product of Ontario

2 packages Mozzarella Di Bufala – Product of Ontario

Black pepper, to taste – Product of Canada

Balsamic reduction, desired amount – Niagara Region

1 bunch fresh basil – Burlington, Ontario

Directions:

Add potatoes to a pot of cold, salted water and bring to a boil. Cook until fork tender, remove, drain and set aside to cool completely.

Wash and dry the tomatoes, slice each one into four even pieces. Remove the cheese from the packaging, slice and dry each piece using a paper towel. Wash and pat try the basil. Set all ingredients aside while you wait for the potatoes to cool.

Once the potatoes have cooled, slice each potato into 1” slices and place on a serving platter. Top each potato with a piece of tomato and mozzarella. Drizzle with balsamic vinegar and garnish with a piece of basil. Sprinkle some pepper and enjoy!
