Campfire Potatoes

Are you planning a camping trip this year? Thinking about what to pack, food-wise can be a challenge. Potatoes bring possibilities to your campsite. Spices and herbs can intensify your meal and are easily packed. Wrapping food in tinfoil and allowing it to cook slowly over the grill is one low-maintenance option. Make sure to keep food safety in mind. Use a properly insulated cooler and pack foods in waterproof bags or containers.

Creamy Garlic and Herb Hassleback Potatoes

3 EarthFresh foil baked potatoes

2 TBSP. butter-melted

1/2 cup of shredded Herb and Garlic cheese blend – Philadelphia brand

Unwrap potatoes and cut even slits against the length of the potato – do not cut potato all the way through. Drizzle butter on top and add cheese to each cut slit. Wrap potatoes with tinfoil and place on your campfire or on a grill. Cook for 60-80- minutes.

Camping tip: Adding the butter first helps prevent the potato from drying out in the campfire.


Roasted Pepper and Potatoes

1 bag of EarthFresh Mini Red Organic Potatoes

2 TBSP. vegetable oil

2 Green peppers

1 Red peppers

2 TBSP. of your favourite vegetable spice

Cut potatoes lengthwise and place in a foil tray. Add vegetable oil, sliced peppers and vegetable spice – mix well. Place on your campfire or on a grill and cook for 60 minutes.


Fire Roasted Mini Yellow with onion and garlic

1 bag of EarthFresh mini yellow organic potatoes

2 TBSP. vegetable oil

1 large onion – diced

6-8 garlic cloves

2 TBSP. Chipotle spice mix

Salt and pepper

Cut potatoes lengthwise and place in a foil tray. Add vegetable oil, diced onions, garlic and chipotle spice – mix well. Place on your campfire or on a grill and cook for 60 minutes.
